- 1 large egg, beaten
- 1/2 cup full-fat sour cream
- 2/3 cup zucchini, grated and drained
- 3/4 cup sharp cheddar cheese, grated, divided
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Combine flour, salt, baking powder, baking soda, and sugar in a large bowl.
- Cut in the cold butter until the mixture resembles coarse meal.
- Whisk egg and sour cream in a separate bowl until smooth.
- Add the wet ingredients to the dry mixture and combine gently.
- Toss grated zucchini and 1/2 cup cheddar with flour, then fold into the dough.
- Shape the dough into an 8-inch circle and cut into 8 wedges.
- Sprinkle remaining cheddar on top of each wedge.
- Bake for 22-24 minutes until golden brown.
Notes
Ensure butter is very cold for optimal flakiness.
Avoid overmixing to retain tenderness.
Experiment with different cheeses or add fresh herbs.
