  • 2/3 cup zucchini, grated and drained
  • 3/4 cup sharp cheddar cheese, grated, divided

Instructions

  • Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • Combine flour, salt, baking powder, baking soda, and sugar in a large bowl.
  • Cut in the cold butter until the mixture resembles coarse meal.
  • Whisk egg and sour cream in a separate bowl until smooth.
  • Add the wet ingredients to the dry mixture and combine gently.
  • Toss grated zucchini and 1/2 cup cheddar with flour, then fold into the dough.
  • Shape the dough into an 8-inch circle and cut into 8 wedges.
  • Sprinkle remaining cheddar on top of each wedge.
  • Bake for 22-24 minutes until golden brown.
