Instructions
- Preheat oven to 350°F (180°C) and line an 8 x 8-inch baking pan with parchment paper.
- In a large bowl, mix gluten-free oats, peanut butter, and mashed bananas until smooth.
- Gently fold in shredded zucchini and chocolate chips.
- Transfer the mixture to the prepared baking pan and spread evenly.
- Sprinkle additional chocolate chips on top before baking.
- Bake for 18-25 minutes, checking doneness with a toothpick.
- Let cool completely in the pan before slicing into bars.
