Ingredients

  • 10 large medjool dates, pitted
  • 2 cups water (more for soaking cashews)
  • ¼ cup Dutch-processed cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of coarse kosher salt
  • 1½ cups milk (whole or 2% preferred)

Instructions

  • Soak cashews and pepitas in water, bring to a boil, add dates, cover, and let sit for 10 minutes.
  • Drain and blend the cashew and pepita mixture with water, cocoa powder, vanilla, and salt until smooth.
  • Add milk to the blender and briefly combine. Adjust consistency with milk or water if needed.
  • Pour into glasses or jars and chill before serving.

Ensure cashews and pepitas are well-soaked for smoother blending.
