Instructions

  • Bloom the gelatin by mixing it with water and letting it sit.

  • Stir in the bloomed gelatin and extracts, then cool in an ice bath.
  • Whip ½ cup of heavy cream until stiff peaks form.
  • Beat egg whites with cream of tartar and remaining sugar until stiff peaks form.
  • Fold the cooled mixture with whipped cream, egg whites, and ¾ cup of shredded coconut.
  • Fill the pie shell with the mixture and smooth the top.
  • Whip the remaining heavy cream to make topping, then decorate the pie.
  • Garnish with coconut and cherries before serving.
