- 1 Baked and cooled pie shell
- 1 envelope unflavored gelatin
- ¼ cup water
- ⅔ cup granulated sugar, divided
- ¼ cup all-purpose flour
- ½ teaspoon salt
- 1 ½ cups whole milk

- ¼ teaspoon vanilla extract
- ½ cup heavy cream
- 3 egg whites
- ¼ teaspoon cream of tartar
- 1 cup shredded coconut
- 2 cups heavy cream for topping
- Cherries for topping
Instructions
- Bloom the gelatin by mixing it with water and letting it sit.
- Combine sugar, flour, and salt in a saucepan, then add milk and heat until boiling.
- Stir in the bloomed gelatin and extracts, then cool in an ice bath.
- Whip ½ cup of heavy cream until stiff peaks form.
- Beat egg whites with cream of tartar and remaining sugar until stiff peaks form.
- Fold the cooled mixture with whipped cream, egg whites, and ¾ cup of shredded coconut.
- Fill the pie shell with the mixture and smooth the top.
- Whip the remaining heavy cream to make topping, then decorate the pie.
- Garnish with coconut and cherries before serving.
Notes
Ensure all ingredients are at room temperature for better mixing.
Whipping cream and egg whites separately helps maintain volume.
