- 1 tablespoon olive oil
- 1 medium yellow or red onion, diced
- 1 red bell pepper, stemmed, seeded, and diced
- 3 cloves garlic, minced
- 2 pounds ground turkey (dark meat for juiciness)
- ¼ cup tomato paste
- 1 tablespoon chili powder
- 1 tablespoon brown sugar
- 2 teaspoons paprika (smoked or sweet)
- 1–½ teaspoons coarse kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 2–½ cups chicken stock (adjust as needed)
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 cup frozen corn kernels (fire-roasted recommended)
- 2 tablespoons lime juice, adjust for taste
Instructions
- Heat olive oil in a large pot over medium heat and sauté onion, red bell pepper, and garlic for 5 minutes.
- Add ground turkey and cook until browned, about 5 minutes.
- Stir in tomato paste and spices, cooking for 1 minute until fragrant.
- Add chicken stock, diced tomatoes, pinto beans, and corn. Bring to boil.
- Reduce heat and simmer for 15 minutes, stirring occasionally.
- Stir in lime juice and adjust flavors as needed.
- Serve hot with desired toppings.
Notes
For deeper flavor, mix different beans.
For spice, add diced jalapeños or extra chili powder.
Allow to sit for a few hours or overnight for richer flavor.
