- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup (170g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- Optional for added flavor: 1/4 teaspoon watermelon flavor
- For Decorating: Royal Icing or Easy Glaze Icing
- Green & pink gel food coloring
- 1/3 cup (60g) mini chocolate chips
Instructions
- Whisk together flour, baking powder, and salt in a medium bowl.
- Cream butter in a large bowl, gradually adding sugar until smooth and creamy.
- Mix in egg, vanilla extract, and optional watermelon flavor.
- Combine dry ingredients with wet mixture until just combined.
- Divide and roll dough to 1/4 inch thick; chill for 1-2 hours.
- Preheat oven to 350°F (177°C); prepare baking sheets.
- Cut out circles and re-roll dough; shape into watermelon slices.
- Bake cookies for 10-11 minutes; allow to cool.
- Prepare royal icing, tint colors, and decorate each cookie.
- Let icing dry completely before serving.
Notes
Make sure your butter is softened for easier mixing.
Use gel food coloring for vibrant designs.
Cookies can be stored in an airtight container for freshness.
