  • 1/4 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • Optional for added flavor: 1/4 teaspoon watermelon flavor
  • For Decorating: Royal Icing or Easy Glaze Icing
  • Green & pink gel food coloring
  • 1/3 cup (60g) mini chocolate chips

Instructions

  • Whisk together flour, baking powder, and salt in a medium bowl.
  • Cream butter in a large bowl, gradually adding sugar until smooth and creamy.
  • Mix in egg, vanilla extract, and optional watermelon flavor.
  • Combine dry ingredients with wet mixture until just combined.
  • Divide and roll dough to 1/4 inch thick; chill for 1-2 hours.
  • Preheat oven to 350°F (177°C); prepare baking sheets.
  • Cut out circles and re-roll dough; shape into watermelon slices.
  • Bake cookies for 10-11 minutes; allow to cool.
  • Prepare royal icing, tint colors, and decorate each cookie.
  • Let icing dry completely before serving.
