Watermelon Jellies

These Watermelon Jellies are a delightful treat perfect for summer. With the sweet flavor of fresh watermelon and a zesty lemon kick, they offer a fun, gummy texture that’s easy to prepare.

  • Total Time: 20 minutes
  • Yield: Approximately 20 jellies 1x

Ingredients

Scale
  • 4 cups of fresh watermelon juice (from one small seedless watermelon)
  • 1/4 cup of fresh lemon juice (approximately 2 lemons)
  • 1/4 cup of honey or granulated sugar (adjust to taste)
  • 4 tablespoons of unflavored gelatin
  • Optional: Extra watermelon slices or mint leaves for garnish

Instructions

  • Cut watermelon into chunks and blend until smooth, then strain to extract juice.
  • In a medium saucepan, combine watermelon juice, lemon juice, and sweetener; stir until blended.
  • Sprinkle gelatin over the mixture and let it bloom for about 5 minutes.
  • Gently heat the mixture, stirring until the gelatin dissolves without boiling.
  • Pour into molds or a shallow pan and spread evenly.
  • Chill in the refrigerator for 4 to 6 hours until set.
  • Remove jellies from molds or cut into squares if using a pan, and garnish as desired.

Notes

Choose a ripe watermelon for optimal flavor.
Adjust sweetness to your liking using honey or sugar.
Ensure gelatin is fully dissolved to avoid texture issues.
