- 6 cups cubed watermelon
- 2–3 ripe avocados (2 large or 3 small/medium)
- ⅔ cup feta cheese (plus more for topping, if desired)
- ¼ cup red onion, finely diced
- ½ cup fresh cilantro, chopped
- 2 tablespoons extra virgin olive oil
- 1 teaspoon red wine vinegar
- Juice of 1 lime (approximately 2 tablespoons)
- Sea salt and cracked pepper, to taste
- Optional: arugula for serving
Instructions
- Cube the watermelon and prepare other ingredients by dicing the red onion and chopping the cilantro and avocados.
- Combine cubed watermelon, red onion, avocado, cilantro, and feta cheese in a mixing bowl and toss gently.
- Whisk together the red wine vinegar, olive oil, lime juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad mixture and stir gently to coat without mashing the avocado.
- Chill in the refrigerator for 20-30 minutes, then serve topped with additional feta and over arugula if desired.
Notes
Use ripe avocados for the best texture and flavor.
Consider adding roasted nuts or seeds for an extra crunch.
