- 1 package (3.4 oz) vanilla instant pudding dry mix
- 1 can (15 oz) pumpkin puree
- 1¾ cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- ⅓ cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix eggs and vegetable oil until blended.
- Stir in pumpkin puree until fully incorporated.
- Gradually add granulated sugar and mix well.
- In a separate bowl, whisk together flour, baking powder, pumpkin spice, baking soda, and vanilla pudding mix.
- Slowly combine wet and dry ingredients without overmixing.
- Grease a loaf pan and pour the batter into it.
- Bake for 1 hour or until a toothpick comes out clean.
- Cool in the pan for 15-30 minutes before transferring to a wire rack.
Notes
Ensure eggs are at room temperature for better mixing.
Allowing the bread to rest after baking enhances its texture.
