  • ½ cup salted butter, softened
  • ½ cup white granulated sugar
  • ½ cup light brown sugar
  • 1 egg, large
  • 1 ½ cups all-purpose flour
  • ⅓ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup pecans, crushed
  • 1 cup caramels, 5 ½ ounces, 130 grams
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine softened butter, white sugar, and brown sugar until creamy.
  3. Add the egg and continue to mix until well combined.
  4. In another bowl, mix together the flour, cocoa powder, baking powder, and baking soda.
  5. Gradually add the dry mixture to the wet mixture, stirring until fully combined.
  6. Fold in the crushed pecans and chopped caramels that have been melted with 2 tablespoons of water.
  7. Scoop out cookies onto a baking sheet, spacing them evenly.
  8. Bake for 65 minutes or until cooked through and slightly firm to the touch.

Notes

Make sure the butter is softened for easier mixing.
Chill the dough for 30 minutes for a firmer cookie texture if desired.
You can substitute walnuts for pecans for a different flavor.
