- 5 lbs. bone-in chicken thighs (approximately 12 pieces)
- ½ cup olive oil
- 1 large lemon, juiced and zested (about 3 tablespoons)
- ¼ cup orange juice
- 6 cloves garlic, crushed
- 1 tablespoon dried or fresh rosemary
- 1 tablespoon sea salt
- 2 teaspoons black pepper
- 1 teaspoon chipotle pepper (or smoked paprika)
- 1 teaspoon cayenne pepper (optional)
Instructions
- Whisk together olive oil, lemon juice, zest, orange juice, garlic, rosemary, sea salt, black pepper, chipotle pepper, and cayenne pepper in a bowl to create the marinade.
- Coat chicken thighs in the marinade and place them in a resealable bag. Seal and refrigerate for a few hours, preferably overnight.
- Preheat the Traeger grill to 200°F.
- Place marinated chicken thighs on the grill skin-side up and smoke using the super smoke setting for 20 minutes.
- Increase the heat to 375°F and smoke for another 30 minutes.
- Increase the temperature to 400°F, baste the chicken with remaining marinade, flip skin-side down, and smoke for an additional 5 minutes until crispy.
Notes
Ensure even marination by flipping the bag periodically.
Using a meat thermometer to check doneness helps achieve perfect tenderness.
Store leftovers in an airtight container in the fridge for up to 3 days.
