- 4 large tomatoes, peeled and sliced
- 9-inch deep-dish pie crust
- 1 cup grated mozzarella cheese
- 1 cup grated cheddar cheese
- 1/2 cup sour cream
- 3 tablespoons mayonnaise
- Salt and pepper, to taste
- 4 fresh basil leaves, torn
Instructions
- Preheat your oven to 350°F.
- Blind bake the pie crust until lightly golden, about 10-15 minutes.
- Prepare tomatoes by salting and draining for 10 minutes.
- Mix sour cream, mayonnaise, mozzarella, and cheddar in a bowl.
- Layer drained tomatoes in the crust, then spread cheese mixture on top.
- Bake for approximately 30 minutes until cheese is melted and lightly browned.
- Add torn basil on top after baking.
- Let cool slightly before slicing and serve warm.
Notes
Use ripe, sun-ripened tomatoes for best flavor.
Salting the tomatoes helps avoid a soggy pie.
Feel free to mix cheeses for a unique flavor.
