- 4 large burrito-sized tortillas
- 1 cup romaine lettuce, chopped
- 1 cup cherry or grape tomatoes, halved
- 1 cup fresh pineapple, chopped (optional)
- 1 cup tortilla chips, crumbled
- 1 cup Mexican blend cheese, grated
- 1 cup refried beans
Instructions
- Heat a skillet and add olive oil and diced onions; sauté until translucent.
- Add ground beef, cooking until browned, mixing in cumin and salt.
- In a bowl, combine sour cream with half a packet of taco seasoning.
- Cut a tortilla from the edge to the center, stopping midway.
- Layer lettuce, tomatoes, sour cream, tortilla chips, cheese, refried beans, and beef.
- Fold the tortilla to encase the filling.
- Grill wrapped tortilla in a skillet until golden brown and cheese melts.

Ensure tortillas are not too thick for easy folding.
