- 1 (19-ounce) bag frozen tortellini
- 1 pint grape tomatoes, halved
- 1 cup shredded basil
- 8 ounces fresh mozzarella pearls or a ball sliced into bite-sized pieces
- 1/2 cup balsamic vinegar
- 1 tablespoon Dijon or spicy brown mustard
- 1 tablespoon diced shallot
- 1 clove garlic, crushed
- 2/3 cup olive oil
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon ground pepper (or to taste)
Instructions
- Cook the tortellini according to package directions, then drain and rinse with cold water.
- In a large bowl, combine the tortellini, grape tomatoes, basil, and mozzarella.
- In a jar, mix the balsamic vinegar, mustard, shallot, garlic, olive oil, Italian seasoning, salt, and pepper. Shake well.
- Pour the dressing over the salad mixture and toss gently to coat the ingredients.
- Serve immediately or refrigerate for up to 24 hours to allow flavors to meld.
Notes
Rinsing the tortellini with cold water prevents them from becoming soggy.
Letting the salad chill enhances the flavors significantly.
