Instructions
- Preheat oven to 400°F and line a baking sheet with parchment.
- Roll out the puff pastry to 1/6 inch thickness.
- Cut out 6 circles from the pastry using a 4-inch cutter.
- Halve the cherry tomatoes and prepare for placing.
- Drizzle olive oil on the baking sheet and season with salt, pepper, and thyme.
- Arrange tomatoes cut-side down in a flower shape on each circle.
- Sprinkle shredded Gruyère cheese over the tomatoes.
- Cover with puff pastry circles, sealing edges by crimping.
- Bake for 15-20 minutes until golden brown.
- Cool slightly, then flip onto a serving plate and serve warm.
