- 10 oz Mexican beer (like Modelo Especial or Corona)

- 4 oz cream cheese
- 12 oz freshly shredded sharp cheddar cheese
- Pico de Gallo (for serving)
- Guacamole or fresh sliced avocado (for serving)
- Fresh cilantro (for garnish)
Instructions
- In a skillet, brown ground beef with taco seasoning and onion.
- Add drained Rotel and cornstarch, stirring to combine.
- Pour in Mexican beer and milk, stirring until simmering.
- Stir in cream cheese until melted and smooth.
- Fold in sharp cheddar cheese until gooey and fully combined.
Notes
For the best melt, use freshly shredded cheese.
To adjust thickness, add extra milk or beer as needed.
Keep warm in a slow cooker for optimal serving temperature.
