- 4 pounds sweet potatoes, peeled and cut into 1" pieces
- 1 cup unsalted butter
- 1 cup dark brown sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 3 cups mini marshmallows (divided)
Instructions
- Preheat the oven to 400°F (200°C).
- Boil the sweet potatoes until fork-tender, about 15-20 minutes.
- Drain and mash the sweet potatoes until smooth.
- Melt the butter and mix in dark brown sugar, cinnamon, and nutmeg; boil.
- Stir in 1½ cups mini marshmallows until melted.
- Combine the marshmallow mixture with the sweet potatoes and spread in a baking dish.
- Top with remaining mini marshmallows.
- Bake for 15 minutes until marshmallows are golden brown.
Notes
Cut sweet potatoes into uniform pieces for even cooking.
Adjust sweetness by varying brown sugar amount.
Watch marshmallows closely while baking to prevent burning.
