- 4 salmon fillets (about 6 oz each)
- 1/2 cup cream cheese, softened
- 1/4 cup cooked spinach, drained and chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon zest
- 1 tablespoon Dijon mustard
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- Preheat oven to 375°F (190°C).
- Mix cream cheese, spinach, dill, lemon zest, Dijon mustard, garlic powder, salt, and black pepper in a bowl.
- Cut small pockets into each salmon fillet.
- Fill each fillet with the creamy mixture.
- Roll each fillet into pinwheels.
- Sear pinwheels in heated olive oil until golden brown.
- Transfer to oven and bake for 10-12 minutes until cooked through.
- Serve warm with lemon wedges.
Notes
Make sure cream cheese is fully softened to avoid lumps.
Do not overstuff the salmon fillets to prevent spillage.
Check internal temperature of salmon; it should reach 145°F (63°C).
