- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar (divided)
- 2/3 cup all-purpose flour
- 1/3 cup salted butter (melted)
- 1/2 tsp. ground cinnamon
- 2 1/2 cups fresh peaches (peeled and sliced, about 3 peaches)
- 1 cup fresh strawberries (sliced)
- 3 teaspoons cornstarch
- 1/3 cup water
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Mix oats, 1/2 cup brown sugar, flour, and cinnamon in a bowl.
- Add melted butter and stir to achieve a crumbly texture.
- Set aside half for topping.
- Spread remaining mixture in a greased baking pan.
- Layer sliced peaches and strawberries over the crust.
- In a saucepan, combine 1/4 cup brown sugar, cornstarch, salt, and water; stir over heat until thickened.
- Remove from heat and stir in vanilla.
- Pour syrup over the fruit layer, then sprinkle reserved crumb mixture on top.
- Bake at 350°F for about 35 minutes until golden and bubbly.
Notes
Using fresh, ripe fruit enhances flavor.
Add nuts or coconut flakes to the topping for extra crunch.
Monitor broiling closely to prevent burning.
