Strawberry Mojitos

Ingredients

  • ¾ cup water
  • ¾ cup sugar
  • 1 cup chopped strawberries
  • ¾ cup strawberry simple syrup *made above
  • 4 mint leaves, torn or chopped
  • 9 oz rum (or gin for a twist)
  • ¼ cup lemon juice
  • 12 oz lemon sparkling water
  • 2 cups crushed ice (more or less as desired)

Instructions

  • Combine water, sugar, and chopped strawberries in a saucepan.
  • Simmer the mixture over medium heat, stirring for about 5 minutes.
  • Cool the syrup and refrigerate for at least 1 hour.
  • In a glass, mix 3 tablespoons of syrup with 4 mint leaves and muddle together.
  • Add ½ cup crushed ice, lemon juice, sparkling water, and rum.
  • Garnish with sliced strawberries or mint, and serve immediately.

Notes

Make the syrup in advance for a stronger flavor.
Use fresh strawberries for the best taste.
Adjust the amount of rum to suit your preference.
