Ingredients

- ¾ cup water
- ¾ cup sugar
- 1 cup chopped strawberries
- ¾ cup strawberry simple syrup *made above
- 4 mint leaves, torn or chopped
- 9 oz rum (or gin for a twist)
- ¼ cup lemon juice
- 12 oz lemon sparkling water
- 2 cups crushed ice (more or less as desired)
Instructions
- Combine water, sugar, and chopped strawberries in a saucepan.
- Simmer the mixture over medium heat, stirring for about 5 minutes.
- Cool the syrup and refrigerate for at least 1 hour.
- In a glass, mix 3 tablespoons of syrup with 4 mint leaves and muddle together.
- Add ½ cup crushed ice, lemon juice, sparkling water, and rum.
- Garnish with sliced strawberries or mint, and serve immediately.
Notes
Make the syrup in advance for a stronger flavor.
Use fresh strawberries for the best taste.
Adjust the amount of rum to suit your preference.
