- 2 1/4 cups (282 g) all-purpose flour, spooned and leveled
- 2 tbsp (8 g) ceremonial grade, bright green, matcha powder
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 10 tbsp (140 g) unsalted butter, softened
- 1 1/2 cups (300 g) granulated white sugar
- 3 eggs, at room temperature
- 1 tbsp vanilla extract
- 1 cup (240 ml) buttermilk
- 2 tsp (2.5 g) ceremonial grade, bright green, matcha powder (for soak)
- 2 tbsp (30 ml) water (for soak)
- 1/2 cup (120 ml) whole milk (for soak)
- 1/2 – 3/4 cup (150 g – 225 g) sweetened condensed milk, to taste (for soak)
- 1 tsp vanilla extract (for soak)
- 1 cup (224 g) unsalted butter, softened (for frosting)
- 8 oz (226 g) cream cheese, cold (for frosting)
- 2 1/2 cups (325 g) powdered sugar (for frosting)
- 1 cup (25 g) freeze-dried strawberries
Instructions
- Preheat your oven to 350℉ (175 ℃) and prepare a 9×9 inch pan.
- Whisk together flour, matcha powder, baking powder, baking soda, and salt in a medium bowl.
- Cream softened butter and granulated sugar until light and fluffy in a larger bowl.
- Incorporate eggs and vanilla extract, beating until smooth.
- Gradually add flour mixture and buttermilk to wet ingredients, combining on low speed.
- Pour batter into the pan and bake for 38-42 minutes until a toothpick comes out clean.
- Cool the cake in the pan for 30 minutes, then transfer to a wire rack to cool completely.
- Prepare matcha mixture by whisking matcha powder with water until smooth.
- Mix in whole milk, sweetened condensed milk, and vanilla extract.
- Cream together softened butter and cream cheese until fluffy.
- Prepare freeze-dried strawberries and grind into a fine powder.
- Combine powdered sugar and ground strawberries into the butter mixture.
- Trim the top of the cooled cake and poke holes in it.
- Soak the cake with the matcha mixture and frost with strawberry cream cheese frosting.
- Slice and serve with fresh strawberries or ice cream.
Notes
Ensure all ingredients are at room temperature for better mixing.
Adjust the soak’s sweetness to your preference to customize the flavor.
