- ½ cup quartered strawberries
- 1 cup water

- 2 Tbsp cornstarch
- ½ cup strawberry water (from cooked strawberries)
- 1 Tbsp lemon juice
- 1 ½ cups roughly chopped strawberries
- 1 box refrigerated pie crusts (2 crusts)
- 1 egg (for egg wash)
- Coarse sugar for sprinkling
- ½ cup powdered sugar
- 1–2 tsp milk (for icing)
Instructions
- Prepare strawberry water by boiling quartered strawberries in water, then strain.
- Mix salt, sugar, and cornstarch. Combine with strawberry water and lemon juice and heat until thick.
- Stir in roughly chopped strawberries.
- Assemble pies using rolled-out pie crust, add filling, seal with egg wash, and create vents.
- Bake at 450°F for about 5 minutes or until golden brown.
- Prepare icing and drizzle over cooled pies before serving.
Notes
Choose ripe strawberries for the best flavor.
Ensure pie crust is cold for a flaky texture.
Adjust sugar based on strawberry sweetness.
