  • 2 tablespoons lemon juice
  • 1¾ to 2 cups sugar, depending on your sweetness preference

Instructions

  • Roughly mash strawberries in a bowl.
  • Combine mashed strawberries, gooseberries, water, and lemon juice in a heavy-bottomed pot over medium-low heat.
  • Simmer the mixture for about 10 minutes, stirring often.
  • Add sugar and stir gently until dissolved, about 5 to 8 minutes.
  • Increase heat and bring the mixture to a boil for about 12 minutes.
  • Test jam set using a cold plate method; adjust cooking time if necessary.
