- 1.5 cups strawberries, cleaned and green tops removed (about ½ a pound or 227 grams)
- 1.5 cups fresh gooseberries, cleaned and topped and tailed (about ½ a pound or 227 grams)
- ¼ cup water
- 2 tablespoons lemon juice
- 1¾ to 2 cups sugar, depending on your sweetness preference
Instructions
- Roughly mash strawberries in a bowl.
- Combine mashed strawberries, gooseberries, water, and lemon juice in a heavy-bottomed pot over medium-low heat.
- Simmer the mixture for about 10 minutes, stirring often.
- Add sugar and stir gently until dissolved, about 5 to 8 minutes.
- Increase heat and bring the mixture to a boil for about 12 minutes.
- Test jam set using a cold plate method; adjust cooking time if necessary.
- Pour the jam into a clean jar and let cool before storing.

Adjust sugar based on your taste preference.
