  • 1 tablespoon Cornstarch
  • 16 oz Cream cheese (room temperature)
  • ½ cup White granulated sugar (for cheesecake)
  • ¼ cup Sour cream (room temperature)
  • â…› cup Heavy cream (room temperature)
  • 1 teaspoon Pure vanilla extract
  • 2 Large eggs (room temperature)
  • Vanilla Oreos (for decoration)

Instructions

  • Preheat oven to 325°F (163°C) and prepare an 8×8-inch pan.
  • Combine graham cracker crumbs, brown sugar, and melted butter.
  • Press mixture into prepared pan and bake for 10 minutes.
  • In a saucepan, cook strawberries, sugar, lemon juice, water, and cornstarch until boiling.
  • Thicken the strawberry mixture, then cool.
  • Beat cream cheese, add sugar, and mix remaining ingredients.
  • Pour cheesecake batter over the crust and bake for 40-45 minutes.
  • Cool cheesecake gradually for 20 minutes with the oven door ajar.
  • Add strawberry sauce over the cooled cheesecake and chill for at least 6 hours.
  • Serve chilled, topped with Vanilla Oreos.
