- â…› cup Heavy cream (room temperature)
- 1 teaspoon Pure vanilla extract
- 2 Large eggs (room temperature)
- Vanilla Oreos (for decoration)
Instructions
- Preheat oven to 325°F (163°C) and prepare an 8×8-inch pan.
- Combine graham cracker crumbs, brown sugar, and melted butter.
- Press mixture into prepared pan and bake for 10 minutes.
- In a saucepan, cook strawberries, sugar, lemon juice, water, and cornstarch until boiling.
- Thicken the strawberry mixture, then cool.
- Beat cream cheese, add sugar, and mix remaining ingredients.
- Pour cheesecake batter over the crust and bake for 40-45 minutes.
- Cool cheesecake gradually for 20 minutes with the oven door ajar.
- Add strawberry sauce over the cooled cheesecake and chill for at least 6 hours.
- Serve chilled, topped with Vanilla Oreos.
