- 1 tablespoon unsalted butter
- ¾ cup granulated sugar
- 1 large egg
- ¾ teaspoon vanilla extract
- ½ cup buttermilk
- ¾ cup cake flour
- ¾ cup all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 12–15 fresh strawberries (about 1 cup pureed)
Instructions
- Trim strawberries and pulse in a food processor to make a chunky puree.
- Cream together butter and sugar until fluffy.
- Add egg, vanilla extract, buttermilk, and strawberry puree. Mix until blended.
- Sift in cake flour, all-purpose flour, baking soda, baking powder, and salt. Stir until just combined.
- Transfer batter to a piping bag and fill greased donut tins halfway.
- Bake at 400°F for 7-8 minutes until a toothpick comes out clean.
- Whisk powdered sugar with milk to make a glaze.
- Once baked, glaze the donuts and let them sit on a wire rack to cool.
Notes
Select ripe strawberries for the best flavor.
Avoid overmixing to keep donuts fluffy.
Rotate the pan halfway through baking for even cooking.
