  • ½ teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 pound beef stir fry meat (or any thinly sliced cut)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, sliced
  • 2 bell peppers (any colors), sliced
  • 12 garlic cloves, finely chopped
  • 1 (15-ounce) can diced or petite diced tomatoes
  • 2 ½ cups beef or chicken stock (or water)
  • 10 ounces dried pasta (penne, about 3 cups dry)
  • ¼ cup sour cream

Instructions

  • Combine spices and rub on beef.
  • Sear the beef in a skillet until browned.
  • Sauté onions, bell peppers, and garlic in the same skillet.
  • Add diced tomatoes and stock to skillet, then stir in the pasta and boil.
  • Combine cooked beef, vegetables, and sour cream with pasta until heated through.

Notes

Marinate beef with spices for 30 minutes for enhanced flavor.
Adjust red pepper flakes for desired spice level.
Reserve pasta water if sauce becomes too thick.
