  • 1 pound sirloin steak, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter, divided
  • 2 tablespoons extra virgin olive oil, divided
  • 1 medium yellow onion, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1 tablespoon garlic, minced
  • 1 cup (136 g) orzo, uncooked
  • 2 ½ cups (20 ounces / 602 g) beef broth
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons Parmesan cheese, grated
  • Fresh parsley, chopped, for garnish

Instructions

  • Pat the steak cubes dry and season with salt and pepper. Let rest.
  • Melt 1 tablespoon of butter and olive oil in a skillet, then add onions and cook for 30-40 minutes until caramelized. Stir in garlic.
  • In the same skillet, add remaining butter and oil, sear the steak in batches until cooked to your liking. Rest the steak.
  • Add uncooked orzo to the skillet, stir to coat, then add beef broth and Worcestershire sauce. Simmer for 8-10 minutes until orzo is tender.
  • Mix the caramelized onions back into the skillet, stir in Parmesan cheese, and serve garnished with parsley.

Notes

Ensure the skillet is hot enough for a good sear on the steak.
Slow-cook the onions for enhanced flavor and sweetness.
Stir the orzo occasionally to prevent sticking.
