Ingredients

  • ½ cup (5 oz) ricotta cheese, drained
  • ⅓ cup grated parmesan cheese
  • ¼ teaspoon grated fresh garlic
  • 2 tablespoons breadcrumbs
  • ¾ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 (9×13-inch) sheet puff pastry, fresh or frozen (thawed)
  • 1 egg, beaten
  • 1 tablespoon poppy or sesame seeds

Instructions

  • Thaw or blanch the spinach, then drain and cool.
  • Mix spinach with ricotta, parmesan, garlic, breadcrumbs, salt, and pepper.
  • Roll out the puff pastry and divide it into two rectangles.
  • Spread spinach filling along the length of each rectangle and roll tightly.
  • Freeze logs for about 1 hour.
  • Preheat oven to 400℉ (200℃) and prepare baking sheet.
  • Slice logs into 1.3-inch (3 cm) pieces and arrange on tray.
  • Brush tops with beaten egg and sprinkle seeds before baking.
  • Bake for 25 minutes until golden brown.
