- ¾ cup (5 oz) fresh or frozen spinach (cooked and drained)
- ½ cup (5 oz) ricotta cheese, drained
- ⅓ cup grated parmesan cheese
- ¼ teaspoon grated fresh garlic
- 2 tablespoons breadcrumbs
- ¾ teaspoon salt
- ⅛ teaspoon black pepper
- 1 (9×13-inch) sheet puff pastry, fresh or frozen (thawed)
- 1 egg, beaten
- 1 tablespoon poppy or sesame seeds
Instructions
- Thaw or blanch the spinach, then drain and cool.
- Mix spinach with ricotta, parmesan, garlic, breadcrumbs, salt, and pepper.
- Roll out the puff pastry and divide it into two rectangles.
- Spread spinach filling along the length of each rectangle and roll tightly.
- Freeze logs for about 1 hour.
- Preheat oven to 400℉ (200℃) and prepare baking sheet.
- Slice logs into 1.3-inch (3 cm) pieces and arrange on tray.
- Brush tops with beaten egg and sprinkle seeds before baking.
- Bake for 25 minutes until golden brown.
Notes
Ensure spinach is thoroughly drained to avoid soggy filling.
Experiment with different cheeses or herbs to add flavor.
Avoid overstuffing the logs for perfectly formed bites.
