Ingredients
Scale
- 8 large eggs
- 1 cup fresh spinach (or 1/2 cup thawed, drained frozen spinach)
- 1/2 cup shredded mozzarella or crumbled feta cheese
- 1/4 cup milk (or dairy-free alternative)
- 1 tablespoon olive oil or butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional add-ins: diced tomatoes, sautéed onions, chopped herbs
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9-inch oven-safe skillet.
- Heat olive oil or butter in the skillet and sauté fresh spinach until wilted.
- In a mixing bowl, whisk eggs, milk, salt, and pepper until combined.
- Stir in sautéed spinach, cheese, and any optional add-ins.
- Pour the mixture into the prepared skillet, spreading it evenly.
- Bake for 22–25 minutes or until the center is set and lightly golden.
- Let cool for about 5 minutes, slice, and serve warm or at room temperature.
Notes
Fresh spinach provides the best flavor; frozen can work but ensure it’s drained well.
Feel free to customize the cheese or add more vegetables as desired.
To check doneness, insert a toothpick; clean means it’s ready.
