Ingredients
Scale
- 1 ½ pound medium shrimp tail on, peeled and deveined
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- 6 garlic cloves minced
- ½ teaspoon red pepper flakes
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh minced parsley plus some for garnish
Instructions
- Preheat the oven to 400°F and line a large rimmed baking sheet with nonstick foil or parchment paper.
- In a large bowl, whisk the olive oil, lemon juice, minced garlic, salt, black pepper, red pepper flakes, and minced parsley together.
- Pat the shrimp dry with paper towels, then add them to the bowl and gently stir to coat evenly with the mixture.
- Arrange the shrimp in a single layer on the prepared baking sheet, ensuring there is space between each piece.
- Bake in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque. Check for doneness at the 6-minute mark to prevent overcooking.
- Garnish with fresh minced parsley and serve immediately, either over pasta, rice, or as an appetizer with cocktail sauce and lemon wedges.
Notes
Adjust the amount of red pepper flakes to control the spice level to your preference.
For added flavor, marinate the shrimp in the olive oil mixture for about 30 minutes before baking.
Serve with a side salad or garlic bread for a complete meal.
