- 2 large onions, peeled and chopped
- 1 tablespoon vegetable oil
- 1 cup (200 g) brown sugar
- 1 medium-sized fresh pineapple (about 1.5 lbs), peeled and chopped, or 5-6 ripe mangoes, peeled, stoned, and roughly chopped
- 2 red chilies, finely chopped
- 2 teaspoons curry powder
- ½ teaspoon ground ginger
- ½ teaspoon salt
- 1 cup (250 ml) white wine vinegar
- 2 quarts (about 2 liters) water
Instructions
- Heat vegetable oil in a large pan over medium heat and sauté onions until translucent.
- Add pineapple or mango, brown sugar, chilies, curry powder, ginger, salt, vinegar, and water. Stir and bring to a gentle boil.
- Reduce heat to a simmer for about 30 minutes, then lower heat further and allow to thicken for 1 ½ to 2 hours.
- Check consistency and adjust to preference before cooling completely.
Notes
Fresh, ripe fruit yields the best flavor.
Adjust the spice level based on chili quantity.
Stir frequently to prevent burning during cooking.
