Spiced Pear Baked Oatmeal

Ingredients

  • 2 eggs, large
  • 1/2 cup / 110g brown sugar
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1/4 tsp nutmeg
  • 1 tsp vanilla
  • 1½ tsp baking powder
  • 1/3 cup / 65g butter, melted
  • 1 cup / 250ml milk
  • 3 cups / 255g rolled oats
  • 6 pears, small
  • 2 tbsp toasted walnuts, chopped (optional)

Instructions

  1. Preheat the oven to 325F/170C and butter a round or rectangular 9×13 inch baking dish.
  2. In a large bowl, whisk together the eggs, brown sugar, spices, vanilla, baking powder, melted butter, and milk.
  3. Stir in the rolled oats until well combined, then gently mix in 3 peeled and chopped pears.
  4. Pour the oatmeal mixture into the prepared baking dish and arrange 3 sliced pears on top.
  5. Bake uncovered for 30-35 minutes.

Notes

For extra crunch, feel free to add more toasted walnuts on top before baking.
You can substitute the pears with apples for a different flavor profile.
Serve warm for a comforting breakfast or snack.
