- 2 eggs, large
- 1/2 cup / 110g brown sugar
- 1 tsp cinnamon
- 1 tsp mixed spice
- 1/4 tsp nutmeg
- 1 tsp vanilla
- 1½ tsp baking powder
- 1/3 cup / 65g butter, melted
- 1 cup / 250ml milk
- 3 cups / 255g rolled oats
- 6 pears, small
- 2 tbsp toasted walnuts, chopped (optional)
Instructions
- Preheat the oven to 325F/170C and butter a round or rectangular 9×13 inch baking dish.
- In a large bowl, whisk together the eggs, brown sugar, spices, vanilla, baking powder, melted butter, and milk.
- Stir in the rolled oats until well combined, then gently mix in 3 peeled and chopped pears.
- Pour the oatmeal mixture into the prepared baking dish and arrange 3 sliced pears on top.
- Bake uncovered for 30-35 minutes.
Notes
For extra crunch, feel free to add more toasted walnuts on top before baking.
You can substitute the pears with apples for a different flavor profile.
Serve warm for a comforting breakfast or snack.
