  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Monterey Jack cheese (shredded)
  • 1 package egg roll wrappers (20 wrappers)

Instructions

  • Mix the chicken, corn, black beans, spinach, red bell pepper, and jalapeño in a bowl.
  • Add cumin, chili powder, salt, and black pepper. Stir in cheese until combined.
  • Lay out an egg roll wrapper, place filling in center, fold and roll tightly.
  • Fry in hot oil for 2-3 minutes on each side until golden brown or bake at 425°F for 15-20 minutes.
