- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder

- 1 cup buttermilk
- 1/2 cup melted butter
- 1/4 cup honey
- 2 large eggs
Instructions
- Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt until blended.
- In another bowl, whisk buttermilk, melted butter, honey, and eggs until smooth.
- Combine wet and dry ingredients, stirring gently until just combined.
- Spoon batter into muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
- Cool slightly in the tin, then transfer to a wire rack and serve warm.
Notes
