- ½ cup (8 tablespoons) butter , softened
- 1 ¼ cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups all-purpose flour

- ¾ teaspoon salt
- 1 cup ripe bananas , mashed (3 medium brown bananas)
Instructions
- Preheat oven to 325°F. Spray 2 8×4-inch loaf pans with nonstick cooking spray, and line with parchment paper if desired.
- In a large bowl, cream together the softened butter and granulated sugar. Mix in the eggs, vanilla extract, and sour cream, then fold in the mashed bananas.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined. If desired, fold in nuts.
- Divide the batter evenly between the two loaf pans and bake for 55 minutes. If using a 9×5-inch pan, increase baking time by 10-15 minutes. Check doneness using a toothpick; it should come out clean.
- Once baked, allow the bread to cool in the pans for 10-12 minutes, then transfer to a cooling rack to cool completely.
Notes
Ensure bananas are overripe for the best sweetness and flavor.
For added texture, consider folding in chopped nuts or chocolate chips if desired.
Store in an airtight container at room temperature for up to four days.
