- 1 cup peanut butter (creamy or chunky)
- 2 large eggs
- 1 teaspoon vanilla extract

- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup quick oats
- 1/2 cup old-fashioned oats
- 2 cups M&Ms (plus more for topping)
- Candy eyes (optional)
Instructions
- Beat the softened butter for 2 minutes in a large bowl or stand mixer.
- Combine brown sugar, white sugar, and peanut butter until smooth, then add eggs and vanilla.
- Stir in flour, baking soda, and salt without overmixing.
- Fold in quick oats, old-fashioned oats, and M&Ms until just combined.
- Chill the dough in the fridge for 1 to 3 hours or preferably overnight.
- Preheat oven to 350°F (175°C) and line baking sheets.
- Shape dough into 2-inch balls and place on sheets with space in between.
- Bake for 10-12 minutes until edges are firm, and centers are slightly shiny.
- Press additional M&Ms and candy eyes into cookies right after baking.
- Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
