  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup quick oats
  • 1/2 cup old-fashioned oats
  • 2 cups M&Ms (plus more for topping)
  • Candy eyes (optional)

Instructions

  • Beat the softened butter for 2 minutes in a large bowl or stand mixer.
  • Combine brown sugar, white sugar, and peanut butter until smooth, then add eggs and vanilla.
  • Stir in flour, baking soda, and salt without overmixing.
  • Fold in quick oats, old-fashioned oats, and M&Ms until just combined.
  • Chill the dough in the fridge for 1 to 3 hours or preferably overnight.
  • Preheat oven to 350°F (175°C) and line baking sheets.
  • Shape dough into 2-inch balls and place on sheets with space in between.
  • Bake for 10-12 minutes until edges are firm, and centers are slightly shiny.
  • Press additional M&Ms and candy eyes into cookies right after baking.
  • Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
