  • 2 eggs, whisked
  • 1 cup bean sprouts
  • 1/2 cup peanuts, chopped
  • 1/3 cup cilantro, chopped
  • Lime juice of 1 lime (optional)

Instructions

  • Whisk together brown sugar, fish sauce, soy sauce, rice vinegar, and chili paste to make the sauce.
  • Prepare the pad Thai noodles according to package instructions and set aside.
  • Heat oil in a skillet and sauté shallot, garlic, and green onions until fragrant.
  • Add shrimp to the skillet and cook until pink.
  • Scramble the eggs in the skillet, pushing the shrimp to the side.
  • Add noodles, bean sprouts, and peanuts to the skillet and toss to combine.
  • Pour sauce over the mixture and stir until well-coated. Cook one more minute.
  • Stir in cilantro and lime juice, then serve garnished with additional cilantro or lime wedges.
