- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp chili paste
- 8 oz. pad thai noodles
- 1 tbsp oil
- 1 shallot, diced
- 2 garlic cloves, minced
- 3 green onions, chopped
- 1 lb. shrimp, thawed
- 2 eggs, whisked
- 1 cup bean sprouts
- 1/2 cup peanuts, chopped
- 1/3 cup cilantro, chopped
- Lime juice of 1 lime (optional)
Instructions
- Whisk together brown sugar, fish sauce, soy sauce, rice vinegar, and chili paste to make the sauce.
- Prepare the pad Thai noodles according to package instructions and set aside.
- Heat oil in a skillet and sauté shallot, garlic, and green onions until fragrant.
- Add shrimp to the skillet and cook until pink.
- Scramble the eggs in the skillet, pushing the shrimp to the side.
- Add noodles, bean sprouts, and peanuts to the skillet and toss to combine.
- Pour sauce over the mixture and stir until well-coated. Cook one more minute.
- Stir in cilantro and lime juice, then serve garnished with additional cilantro or lime wedges.
Notes
Use fresh shrimp for the best flavor and texture.
Adjust chili paste according to spice preference.
Consider marinating shrimp in fish sauce and lime for added flavor.
