- 1 lb medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 bell pepper (any color), thinly sliced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- ½ cup (120 ml) white wine or chicken broth
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- Salt and pepper to taste
- Optional: chopped fresh parsley, for garnish
- Optional: grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté sliced onion and bell pepper for 3-4 minutes until softened.
- Add minced garlic and cook for 1-2 minutes.
- Incorporate diced tomatoes, white wine or chicken broth, oregano, and basil. Simmer for about 10 minutes.
- Season shrimp with salt and pepper, then add to the skillet. Cook for 3-4 minutes until shrimp are pink.
- Taste and adjust seasoning as needed. Garnish with parsley if desired.
- Serve over rice and add Parmesan cheese for extra flavor.
Notes
Choose fresh shrimp for the best flavor and texture, but thawed frozen shrimp can work as well.
Monitor cooking time closely to ensure the shrimp remain juicy and tender.
Feel free to add extra vegetables like zucchini or mushrooms for added nutrition.
