- 2½ pounds small yellow and red potatoes, quartered
- 1 onion, sliced thin
- 4 cloves garlic, minced
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 6–8 Italian sausages
- 2 cups frozen peas
Instructions
- Preheat the oven to 400ºF.
- Toss potatoes, onion, and garlic on the sheet pan with olive oil and seasonings.
- Roast the vegetables for 30 minutes, tossing halfway.
- Add sausages on top and bake for 25 minutes.
- Stir in peas and bake for an additional 5 minutes.
- Serve hot.
