- ⅛ teaspoon cayenne pepper
- 4 large poached eggs (for topping)
- 4 slices deli ham
- ½ teaspoon coarse sea salt (for garnish)
Instructions
- Preheat the oven to 450°F (232°C).
- Sauté diced shallots in butter for 2 minutes, then add herbs.
- Blend eggs, milk, salt, and flour until frothy.
- Melt butter in a skillet in the oven, then coat the sides.
- Pour batter into the skillet, sprinkle with herbs and cheese.
- Bake for 12-14 minutes until golden and puffed.
- Top with ham, poached eggs, and garnish with salt.

Use fresh herbs for the best flavor.
Ensure the skillet is hot for optimal puffing.
Blend batter just until combined to avoid over-mixing.
