Instructions
- Choose your cooking method: slow cooker or oven.
- If using a slow cooker, line with foil and coat with butter; if using an oven, preheat to 375°F and prepare a baking dish.
- Cook the breakfast sausage in a skillet until browned; drain excess fat.
- Microwave sweet potatoes with water until tender.
- Assemble the casserole with sausage, sweet potatoes, and pour egg mixture over.
- Cook in the slow cooker on high for 2 hours or in the oven for 35 to 40 minutes.
