- 1 ½ lb center-cut cod, cut into bite-sized pieces
- 1 cup high-heat cooking oil
- 8 green onions, chopped
- 4 cloves garlic, minced
- 1 tablespoon finely minced ginger
- 1 teaspoon sugar
- 1 tablespoon rice vinegar
- ⅓ cup cornstarch
- 2 tablespoons rice vinegar
- 2 teaspoons black pepper
- 1 teaspoon sea salt
- 1 large egg
Instructions
- Cut the cod into bite-sized pieces and pat dry.
- Whisk together cornstarch, black pepper, sea salt, rice vinegar, and egg.
- Coat the cod pieces in the batter.
- Heat oil in a large frying pan.
- Fry the battered cod in batches for about 4 minutes or until golden brown.
- Remove fish and drain excess oil.
- Sauté green onions, garlic, ginger, and sugar until fragrant.
- Return fried fish to the pan and drizzle with rice vinegar, tossing gently.
Notes
Ensure oil is at the correct temperature for frying.
Do not overcrowd the pan while frying for crispiness.
