Scale
- 1 cup black kale (cavolo nero), very finely chopped
- 1/4 cup mascarpone or cream cheese
- Juice of 1/2 lemon
- Salt and pepper to taste
- 10 oz puff pastry
- Flour for dusting and rolling
- 10 oz skinless and boneless salmon
- 1 egg, beaten
Instructions
- Remove thick ribs from kale and finely chop the leaves.
- Combine chopped kale with mascarpone and lemon juice; season with salt and pepper.
- Roll out puff pastry into a rectangle.
- Place salmon in the center of pastry; season and spread kale mixture on top.
- Brush edges with beaten egg and fold pastry around salmon; seal edges.
- Transfer to baking sheet, brush with egg wash, and make ventilation slits.
- Bake at 400°F for 30 minutes until golden brown, then let rest before serving.
Notes
Ensure puff pastry is chilled before rolling to maintain flakiness.
Use a sharp knife to slice for neat portions.
