  • 1 English cucumber (fresh and firm)
  • 1/2 large red onion
  • 2 Tbsp chopped fresh Italian parsley
  • 2 Tbsp chopped fresh cilantro
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 1/2 cup extra virgin olive oil (high quality)
  • 1/4 cup red wine vinegar
  • Freshly ground black pepper (to taste)
  • 1 tsp kosher salt
  • 2 garlic cloves (pressed)
  • 1 tsp brown sugar
  • 1 tsp dried oregano

Instructions

  • Core and cut the tomatoes into wedges.
  • Sprinkle tomatoes with brown sugar, kosher salt, and black pepper, then toss.
  • Slice the cucumber and add to the tomato mixture.
  • Thinly slice red onion and add to the bowl.
  • Fold in fresh parsley and cilantro.
  • Whisk olive oil, red wine vinegar, pressed garlic, brown sugar, dried oregano, and kosher salt in a small bowl.
  • Pour the dressing over the salad and toss gently.
  • Cover and let rest at room temperature for 1 to 6 hours.
