- 5 tbsp unsalted butter
- 1/2 cup granulated sugar
- 4 tbsp dark honey
- 3 large eggs

- 2 cups crème fraîche or sour cream
- 2 cups whipping cream
- 1/2 cup powdered sugar
- 1 vanilla bean or 1 tsp vanilla extract
- 1 cup mascarpone, chilled
- 1/2 cup whipping cream
- 1 cup powdered sugar
- 1 vanilla bean or 1 tsp vanilla extract
Instructions
- Preheat oven to 400°F. Line baking trays with parchment.
- Melt butter, sugar, and honey in a double boiler.
- Beat eggs and vanilla, add to melted mixture while stirring.
- Mix in baking soda, salt, and flour until dough thickens.
- Knead dough, divide into 8 parts, and cover.
- Roll each piece into thin circles and bake for 4-5 minutes.
- Combine crème fraîche, whipping cream, powdered sugar, and vanilla. Beat until volume doubles.
- Layer the cream between the cake layers and frost with mascarpone mixture.
Notes
Use dark honey for a richer taste.
Let the cake set in the fridge overnight for better flavor.
Store in an airtight container for up to 4 days.
