  • 1 cup mascarpone, chilled
  • 1/2 cup whipping cream
  • 1 cup powdered sugar
  • 1 vanilla bean or 1 tsp vanilla extract

Instructions

  • Preheat oven to 400°F. Line baking trays with parchment.
  • Melt butter, sugar, and honey in a double boiler.
  • Beat eggs and vanilla, add to melted mixture while stirring.
  • Mix in baking soda, salt, and flour until dough thickens.
  • Knead dough, divide into 8 parts, and cover.
  • Roll each piece into thin circles and bake for 4-5 minutes.
  • Combine crème fraîche, whipping cream, powdered sugar, and vanilla. Beat until volume doubles.
  • Layer the cream between the cake layers and frost with mascarpone mixture.

Notes

Use dark honey for a richer taste.
Let the cake set in the fridge overnight for better flavor.
