Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, celery, and garlic for 5 to 7 minutes.
- Add sliced mushrooms and cook for 3 to 4 minutes.
- Pour in chicken broth and bring to a gentle simmer.
- Incorporate shredded rotisserie chicken and dried thyme; simmer for 20 minutes.
- Adjust seasoning with salt and pepper to taste.
- Serve hot in bowls and enjoy!
