Instructions
- Preheat oven to 400°F and line a baking sheet with parchment. Spread cherries and sprinkle with sugar, then roast for 10 minutes.
- Reduce temp to 325°F and prepare an 8×8 baking pan with non-stick spray and parchment.
- Sift flour, cocoa powder, cornstarch, and salt together.
- Beat sugar, eggs, and egg yolk until fluffy. Mix in melted butter, oil, and vanilla.
- Fold in dry ingredients, then add roasted cherries and chocolate chips.
- Pour batter into pan and spread evenly. Bake for 40-50 minutes until edges are set.
- Cool and freeze for 15 minutes before slicing and serving.
