- 3 pounds baby potatoes

- 1 cup yellow onion, diced

- 1 tablespoon ground pepper
- 1 teaspoon fresh parsley, chopped
Instructions
- Preheat oven to 425°F.
- Cook bacon on a baking sheet for 15-20 minutes until crispy.
- Transfer bacon to a paper towel-lined plate and save the fat.
- In an oven-safe skillet, toss baby potatoes with ½ cup bacon fat.
- Add broth, melted butter, diced onion, garlic, salt, pepper, and parsley.
- Mix well, then bake for 45-50 minutes until fork-tender.
- Crumble crispy bacon over the top and bake for an additional 5 minutes.
