Ingredients

- 8 cups chopped rhubarb (fresh or frozen)
- 3 cups water
- 2 cups sugar
- 10 fresh mint leaves
- 2 ounces white rum
- 2 ounces fresh lime juice
- 1 ounce rhubarb syrup (from the recipe below)
- Soda water (to top)
- Garnishes: lime slices, extra mint leaves, and long strips of rhubarb
Instructions
- Combine rhubarb and water in a pot, simmer for 10 minutes.
- Crush rhubarb and strain the mixture to extract liquid.
- Stir in sugar until dissolved and cool the syrup.
- Fill a glass with ice, add mint, rum, lime juice, and syrup.
- Stir and top with soda water, then garnish as desired.
Notes
Use fresh or frozen rhubarb to explore different flavor profiles.
