- 8 slices rye bread
- 4 tablespoons butter
- ½ cup thousand island dressing
- 4 slices swiss cheese
- 1 cup sauerkraut drained and squeezed dry
- 16 ounces corned beef sliced
Instructions
- Butter each slice of bread.
- Lay 4 slices of rye bread, butter side down, on a cutting board.
- Spread 1 tablespoon of thousand island dressing on each slice.
- Top with Swiss cheese (add extra to taste), ¼ cup sauerkraut, and ¼ of the sliced corned beef on each.
- Spread remaining dressing on the second slice of bread and place it on top of the sandwich, butter side out.
- Heat a skillet over medium-low heat and place the sandwich in it.
- Cook until the sandwich is golden brown and crispy, then flip and cook the other side.
- Cut the sandwich in half and serve with extra dressing on the side.
Notes
For extra flavor, consider adding a dash of pepper or fresh herbs inside the sandwich.
Serve with pickles for a classic pairing.
Feel free to adjust the amount of sauerkraut and dressing to your taste.
