Reuben Sandwich

Ingredients

  • 8 slices rye bread
  • 4 tablespoons butter
  • ½ cup thousand island dressing
  • 4 slices swiss cheese
  • 1 cup sauerkraut drained and squeezed dry
  • 16 ounces corned beef sliced

Instructions

  1. Butter each slice of bread.
  2. Lay 4 slices of rye bread, butter side down, on a cutting board.
  3. Spread 1 tablespoon of thousand island dressing on each slice.
  4. Top with Swiss cheese (add extra to taste), ¼ cup sauerkraut, and ¼ of the sliced corned beef on each.
  5. Spread remaining dressing on the second slice of bread and place it on top of the sandwich, butter side out.
  6. Heat a skillet over medium-low heat and place the sandwich in it.
  7. Cook until the sandwich is golden brown and crispy, then flip and cook the other side.
  8. Cut the sandwich in half and serve with extra dressing on the side.

Notes

For extra flavor, consider adding a dash of pepper or fresh herbs inside the sandwich.
Serve with pickles for a classic pairing.
